What are Dorayakis?
Dorayaki is a type of Japanese sweet that consists of two round-shaped cakes (this type of bread is called kasutera) filled with anko, which is a bean paste made with the azuki bean variant. And we are going to show you a recipe how to make delicious Dorayakis at home.
1. Prepare the Batter
1 : In a bowl, whisk eggs, sugar, and honey until frothy and well combined.
2 : Sift the flour and baking powder into the egg mixture and mix gently.
3 : Add 1 tablespoon of water to adjust the batter's consistency—it should be smooth and slightly thick.
4 : Cover and let the batter rest in the refrigerator for 15-30 minutes.
2. Cook the Pancakes
1 : Heat a non-stick pan over low-medium heat. Lightly grease the pan if necessary, then wipe off excess oil with a paper towel.
2 : Pour a small ladleful (about 2 tablespoons) of batter into the pan to create a round pancake about 3 inches in diameter.
3 : Cook until bubbles form on the surface and the edges are slightly set (about 1-2 minutes).
4 : Flip the pancake and cook for another 30 seconds until golden brown. Repeat with the remaining batter.
3. Assemble the Dorayaki
1 : Take one pancake and spread a generous amount of red bean paste on the flat side.
2 : Place another pancake on top, flat side facing the filling, and gently press the edges together to seal.
4. Serve
Serve immediately or wrap in plastic wrap and let sit for a few hours to allow the flavors to meld.
